The secret to great cooking is... traditional family secrets.

The secret to success in the restaurant business is...  to give good service and to make your customers feel comfortable.

The secret to making Aqui Es Mexico's fajitas is... garnish with a couple of cherry tomatoes and a little mozzarella cheese.


Aqui Es Mexico's fajitas

3 shrimp

3.5 oz. beef strips

3.5 oz. chicken strips

2 oz. pre-cooked chorizo sausage

1.5 oz. Spanish onion

0.5 oz. jalepeño peppers (cut into strips)

3 oz. tomato wedges

2 green onions

2 cherry tomatoes

1 oz. mozzarella cheese


-Sautée the beef, chicken and shrimp together

-Add the Spanish onion, jalepeño peppers, tomato wedges, and chorizo and let cook for 3-4 minutes

-Garnish with sautéed green onion, cherry tomatoes, and mozzarella cheese, and serve with tortillas
